Welcome Matthew Accarrino, the first chef-in-residence at the acclaimed restaurant located in the St. Regis Aspen Resort.
Chefs Club has retooled its dining playbook to offer Aspen a rotating chef-in-residence, with a new chief serving a new menu concept each season. This summer, Aspenites are being treated to the brainchild of Matthew Accarrino of Michelin-starred SPQR in San Francisco. The James Beard Award-nominee developed an Italian, family-style menu that is served as a prix fixe tasting experience ($69 per person), with menu items varying slightly from night to night.
After guests select items for each course, the dishes are portioned to share. Stand out bites include: cocoa flour pasta with lamb, fresh ricotta and mint; sea bass with charred vegetable sauce and burnt Shishito peppers; and a bistecca fiorentina dressed with marrow butter and black magic.
Now is a good time to visit as the restaurant is showing its appreciation for local diners by offering 30% off dinner on Sundays, Tuesdays and Wednesdays. Plus, once the seasons change, so too will the chef, and the chance to taste Accarrino’s creations will require a flight to San Francisco. Through Sept. 6, closed Mondays, chefsclub.com/aspen/about
