Storied restaurant Eleven Madison Park opens its first winter outpost this month at the St. Regis Aspen in partnership with American Express. Spoiler alert: it has yurts!
There are many reasons why Eleven Madison Park was named the best restaurant in the world in 2017; the expert technique and the creativity of the food and dining experience are a few of them. The chef and co-owner, Daniel Humm, has described his cooking as stripped down so that each dish is elemental, beautiful and intentional—which sounds not unlike the Bauhaus masters of yore. Humm and restaurant partner William Guidara will open their first winter season pop-up with EMP Winter House in partnership with American Express at Chefs Club at the St. Regis Aspen. Yurts (what could be more elemental than a yurt?) will be installed in the brick courtyard to accommodate outdoor dining. Chef Humm says, “I’ve always loved Aspen, and it reminds me of the small mountain towns I grew up around in Switzerland.” Hence, the cuisine will focus on Alpine classics such as schnitzel, veal, cream sauces, spaetzli and consommés. If the past two EMP Summer House pop-ups in the Hamptons are any indication, we expect this transient dining experience (run by the same “out East” crew) will be the talk of the town.
